E has of late become a picky eater when it comes to new foods. I personally refuse to be a short order cook at dinner time. She eats a great breakfast and lunch, with a snack as well, so if she’s not into dinner (which we do try to make with her tastes in mind, like broccoli and sweet potatoes on the regular) then she can choose to not eat it. This week, however, I made two relatively healthy dishes for dinner that she loved. I also discovered that E is a fan of the Green Smoothie, giving me a great opportunity to get lots of fruits and veggies into her diet. Win, Win, and Win.
Tonight’s dinner was Pan Fried Pork Chops from Fifteen Spatulas, served with broccoli and sweet potatoes (shockingly). E is not a big meat fan, but she absolutely loved the pork chop. Don’t be scared off with the “fried” part, I used about a tablespoon in total of oil for four pork chops. Joanne uses a homemade seasoning blend in the original recipe, which after using the Lawry’s I will switch to for next time. They were delicious, but with the Lawry’s a bit too salty for my liking.
No really. If I can pull this off, so can you. Joanne’s recipes are so easy to follow and include every detail you need, like using Grapeseed oil for pan frying. Never tried it before, but it will be a staple in my pantry from now on.
Another easy one-dish meal was this week’s Peanut Curry Chicken, which has also been approved by E, and will definitely be repeated.
