There are many things I love about food, especially its ability to be a place of stability and comfort during crazy times. Two of my top choices for comfort foods are pasta and Asian take-out of any kind. Our upcoming move has added some serious stress to daily life, making me crave these particular loves something fierce. Asian is tricky as E is allergic to Sesame and anything involving shrimp doesn’t agree with her. We also try to avoid take out as it has so much hidden fat and calories, and it really isn’t economical. Although pasta is delicious, I lose all ability to portion control with it! So for this week I’ve compiled meals with pasta alternatives along with an Asian inspired pork dish with a few tweaks to avoid Sesame. These along with some of our tried and true favorites make up this weeks’ Printable Meal Plan.
For each meal I’ve included items that can be prepared in advance, either day of, night before, or even a day before, in order to make dinner time less stressful and more manageable. Each week I also include one large meal that will be eaten as a Left Over the next night, with the remaining portions frozen for an easy go-to meal in a pinch. Crock Pot Asian Pork with Mushrooms over Zucchini Noodles (Here’s a great tutorial on how to easily make zucchini noodles with no special equipment!) For this dish we leave out the Sesame oil and instead just add a dash of red pepper flakes, and we make our own Chinese Five Spice blend using this recipe to again avoid Sesame.
