We’re about a week into our Southern living and it is HOT! We went from a cool 55 degrees in CT to 90s with humidity. Needless to say this has taken some adjusting. A trip to Target upgraded E’s wardrobe from Spring to Summer with lots of shorts, short sleeved Ts and sandals.
We’ve moved to morning walk/runs only and lots of cold food and water. In light of the heat (and if you haven’t got the heat in your part of the world yet, Summer is probably on its way soon) here’s a week of dinners that require little to no indoor cooking (sans a slow cooker, and that won’t heat up the kitchen or you!).
I’ve chosen low carb and carb flexible meals in light of swim suit season, all inspired by tastes of Summer like barbecue, grilled salmon and healthy burgers. All have been “tested” by E and approved, and any modifications to make it more kid friendly have been noted.
