So we were hanging out last weekend with some family, and the topic of delicious New Haven, CT pizza came up. We mentioned that we had made a flour-less pizza, and when we revealed that the crust was made of cauliflower, we got some really weird looks. And then “eeewwwww”….
In reality, it was actually really, really good. I’m not saying that it compares to a delicious, chewy, soft, cheesy slice from a New Haven pizza house, but as a healthy alternative it’s quite good!

We made a few modifications. For one we made it larger, so we used 1/2 the head of cauliflower and two eggs, and used Daiya dairy free shredded cheese. We should have made the crust thinner, it didn’t solidify as well with the thickness. We topped it with sauce and sautéed mushrooms, onions, red peppers, and a sprinkle of the Daiya dairy free cheese. Other than that, we followed the recipe and loved it!
