Rotisserie Style Crock Pot Chicken

This is such a super easy recipe! Follow up with the Chicken Stock and White Bean Chicken Chili recipes to really get the most out of one chicken.

 1 Whole chicken

2 teaspoons kosher salt

1 teaspoon paprika

1 teaspoon onion powder

½ teaspoon dried thyme

1 teaspoon Italian seasoning

½ teaspoon cayenne pepper

½ teaspoon black pepper

pinch of chili powder

4 whole garlic cloves

1 vidalia onion, quartered


 Place quartered onion and garlic cloves in the bottom of the crock pot

Combine all spices in a bowl

Remove all giblets, etc from chicken (this seems obvious but in my early days of cooking I may have needed to be reminded a few times!)

Rub spices all over and inside chicken

Place chicken breast side down in crock pot atop the onion and garlic cloves

Cover and cook on high 4-5 hours, or on low or 8. The longer you cook it the more tender the meat. Prepare for it to fall off the bone when getting ready to serve!
