Spaghetti squash is a great alternative to pasta for gluten free and clean eating. It’s super easy to make and adds veggies and fiber to any meal that calls for pasta!
1 Spaghetti squash, halved and unseeded
1 Bag washed baby spinach
1 4 Pack of turkey Sausage any flavor
2 Cloves crushed garlic
2 Tbsp olive oil
Place one half of the spaghetti squash in a microwavable dish with an inch of water. Cover and cook on high for 8-10 minutes.
Meanwhile, heat olive oil in a large skillet on medium heat and add crushed garlic.
Crumble the sausage and add to the skillet, cooking until cooked through (about 10 minutes)
Take out first half of squash and shred with a fork into a bowl (scrape the inside with a fork to make stands of “spaghetti”)
Place second half in same pan with water. Cover and cook on high for 8-10 minutes.
Meanwhile add the spinach to the skillet, cooking until spinach is wilted.
Add the sausage mixture to the spaghetti squash.
Remove the second half of the spaghetti squash from the microwave and repeat the shredding process into the mixture.
Plate and serve!
