Sweet Potato and Carrot Ginger Soup

Having been through many family tragedies, the happy though crazy experience of child birth, and other life altering experiences, I am more than aware that when you ambiguously offer to help someone it doesn’t do much as they will most likely never take you up on it. So when a friend with a 10 month old told me she was going to have surgery I offered to make dinner for her and her husband (Note: Want to be helpful for a friend in need? Make a tangible offer, like running specific errands or cooking a dinner) 

I wanted to find a meal that would be healthy and soothing. I came across a recipe on pb.fingers.com for a  soup with ginger, garlic, and sweet potatoes and decided to give it a try. Ginger and garlic are immune boosters, and ginger is soothing to the stomach to boot. Sweet potatoes are easy to digest and make a smooth base for a pureed soup.

I made a few changes, like adding more sweet potatoes and pepper, lessening the broth, and lowering the cooking time. If you’re looking for a more substantial meal, grilled shrimp would be a great addition to this soup!


2 Cups chicken broth

2 Cups water

1 Pound carrots, cut into chunks

2 Extra large sweet potatoes, peeled and sliced

1 Sweet onion, diced

3 Garlic cloves, minced

2 Tbsp freshly grated ginger

1/2 tsp garlic powder

1/2 tsp black pepper

1 (13.5 oz) can coconut milk


Combine all ingredients except the coconut milk in the crock pot. Cook on High for two hours. Turn down to Low and cook for an additional 4 hours.

Sweet Potato Carrot Soup Crock Pot

Pour into a food processor or blender, and blend until smooth.

Add coconut milk and blend.
